Menu of the Month: Northern Indian Menu
A typical North Indian meal consists of chappatis, parantha or naan served with dals, vegetable curries that are mild and made in ghee/oil. Condiments consist of pickles, mango, mint, cilantro chutneys and yogurt raitas. The popular drinks of North India are Nimbu Pani (lemon drink) and Lassi (iced buttermilk). The common Indian desserts and sweets have ingredients like milk, paneer, rice and wheat flour combined with dried nuts.

Tandoori cooking is a northern Indian specialty and is world famous especially for Tandoori chicken, kebabs, Tandoori Naan and Roti.

Recipe of the Week: Masala Bhindi Recipe
Ingredients
Okra (Bhindi) - 3 lbs
Onion (large) - 1
Ginger/garlic paste - 1 tsp
Tomato - 1
Tumeric powder - 1/4 tsp
Red chilli powder - 1/2 tsp
Cumin powder - 1/2 tsp
Mustard seeds - 1/2 tsp
Salt to taste

Preparation Method
Heat oil in pan and add Mustard Seeds.
Add Onion and cook until transluscent and soft.
Add Ginger/Garlic paste, Turmeric Powder, Cumin Powder and Chilli Powder.
Saute for a minute.
Add Okra and salt and mix it.
Cover the pan and cook on a low heat for ten minutes.
Serve with Rice or Chapatis.
